White Chocolate Macadamia Nut Cookies

This cookie recipe was most recently featured at the Overflowing Sale in Oregon. We not only sold tons of great treasures, but also found our cookies to be in high demand!

So what’s so special about these cookies?

Well, one way to make them extra dense so is to leave them in a sealed container overnight will a couple slices a bread. Give in a try on your next baking sesh!

Ingredients…

  • 1/2 cup butter
  • 1/2 cup shortening
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup sugar
  • 1 large egg
  • 1-1/2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 (6 oz) package white chocolate flavored baking bars, cut into chunks
  • 1 (7 oz) jar macadamia nuts, coarsely chopped

The magic…

Beat butter and shortening at medium speed of an electric mixer until soft and creamy; gradually add sugars, beating well.

Add egg and vanilla; beat well.

Combine flour, baking soda, and salt; gradually add to butter mixture, beating well.

Stir in white chocolate chunks and nuts.

Bake it up!

Drop dough by rounded teaspoonfuls 2 inches apart onto lightly greased cookie sheets.

Bake at 350 degrees for 8-10 minutes or until slightly browned.

Cool slightly on cookie sheets; remove to wire racks and let cool completely.

Pro tip: Once cooled, place cookies in a sealed container (e.g. Tupperware) along with a couple slices of bread. Let sit overnight and your cookies will be softer and denser by morning 🙂
